A few Saturdays ago I decided to experiment and switch up our Saturday breakfast routine. Using what I had, I made this hardy breakfast dish. This hash is a new favorite at our house and has already made an appearance this week in our breakfast routine. I love the simplicity of ingredients but depth of flavor. I also like the sweetness of the potato and coconut oil. Here is how it goes…
1 Large Sweet Potato
1/2 Pound Sausage
2 Tablespoons Coconut Oil
Salt + Pepper
Add coconut oil to nonstick skillet on medium heat.
Add sweet potatoes to heated oil.
Sweet potatoes will begin to brown. Add salt and pepper to sweet potatoes.
Crumble sausage on top of sweet potato.
Sausage will begin to cook and potatoes will become crispy and golden.
Crack 3 eggs directly on top of hash and cover. Cook to your favorite egg consistency.
There is nothing I love more then to cut into my egg and it be slightly runny!
