Pumpkin Spice Latte

I spend way too much money during this time of the year on Starbuck’s Pumpkin Spice Lattes and other pumpkin related coffee drinks at other coffee shops.  A couple of years ago I saw a healthy crock pot pumpkin spice latte drink on Pinterest.  Well, I made it, and as you can imagine, this healthy drink was horrible.  My husband couldn’t even drink it.  So, I never attempted making a pumpkin spice latte again after that day until recently.  I decided to do a little experimenting and come up with a recipe of my own.  This recipe is how we have been filling our pumpkin coffee drink craving without breaking the bank.

Ingredients (serves 2):

Brewed Regular Coffee (enough for two people)

2 Cups Milk

1/4 Cup Pumpkin Puree

1/2 Cup Sugar

1 and 1/2 Teaspoons of Pumpkin Pie Spice

1 Teaspoon of Vanilla

Optional Topping:

Whipped Topping


Brew your coffee.


Heat up and mix the milk, pumpkin, pumpkin pie spice, sugar and vanilla over the stove until well blended.


Fill your coffee cup up half way with the brewed regular coffee and then fill in the other half with the milk mixture.  I topped mine with whipped topping and then sprinkled some cinnamon on top.  We have been making these with decaf coffee at night as a dessert after dinner.  Heating everything up on the stove actually takes no time, and throwing these lattes together is super easy! There is definitely nothing healthy about these pumpkin spice lattes.  However, they sure do taste a whole lot better than the ones I made a couple of years ago.
