We have a slight Costco obsession at our house. We buy meats and milk there, but recently we have ventured out into produce. For the most part we have done well eating what we get before it goes bad. The one thing that we seem to never eat fast enough is bananas. I was on the phone with my sister one morning telling her about our overflowing banana problem when she reminded me of an easy family recipe we have for Banana Nut Bread. Finally a solution to our brown banana problem! I had so many bananas I made two loafs. We froze one of them. We took it out of the freezer last week and it still tasted great. This bread freezes really well!
So here is your answer for those browning bananas you are not sure what to do with.
1 1/2 cups all purpose flour
3/4 teaspoon of baking soda
1 teaspoon salt
2 teaspoons of baking powder
1 cup sugar
2 eggs beaten
3/4 cup canola oil
3 tablespoons buttermilk
1 cup of mashed bananas (usually 3 bananas)
1/2 cup chopped pecans
1 tablespoon vanilla
Step 1: Mix together dry ingredients.
Step 2: Mash bananas and chop pecans.
Step 3: Pour wet ingredients into mixer and allow to combine.
Step 4: Add dry ingredients to wet ingredients.
Step 6: Pour batter into a 5X9 greased loaf pan. Bake at 325 degrees for an hour and 10 mins.
My husband and son enjoyed this bread so much for breakfast that I ended up making a second loaf to freeze
