A couple of months ago we had our son’s two year old birthday party. My mother-in-law volunteered to bring her spinach dip. Let’s just say that out of the three dips laying out that day, her dip was by far the most popular! Ever since his party, I have been craving it! Well, we are having it for game day tomorrow, and I thought I would share it with you before the weekend.
1 Package frozen spinach (thaw and drain)
1 can artichoke hearts (drain and chop)
8 oz. cream cheese (softened)
1 tablespoon mayo
1 cup of monterey jack cheese (shredded)
1/2 parmesan cheese
1 can Rotel (drained)
1 teaspoon ground cumin
1 teaspoon chili powder
Combine all the ingredients.
Spray your pan and spread the dip.
Bake on 350 degrees for 30 minutes and enjoy!
